When he/she says I love you, do you find yourself answering with phrases like 'haha stop playing', 'i know' or 'what is love anyway'? It's hard to be honest when it comes to unrequited love but the drama that will follow if you aren't could be ugly. If you are terrified of hurting his/her feelings in person, then do it with a cookie.
